What is Tuslob Buwa? Literally in the Cebuano dialect, it means “to dip in bubbles”. Tuslob Buwa is one of Cebu's exotic treats you can find in the streets of Carbon or Pasil and in many different towns across the island.

The main ingredient is pig brain.

Now, before you say “ewww” and forget about making plans to go to one, keep in mind that it’s not just the brain alone. The concoction is made up of pig brain, oil, fish sauce, onions, shrimp paste and flavoring. What's nice about this dip is the camaraderie shared when you enjoy it with friends, neighbors and family. The more people involved, the better.

Tuslob Buwa is usually served straight from the wok and most of the time paired with Puso (cooked rice wrapped in coconut leaves) or just plain rice.

If you’re still hesitant, ask your friends and colleagues who’ve tried it at Azul, they will have nothing but praise and good things. Given that there are a lot of stalls and places that you can try tuslob buwa, I recommend going to Azul Tuslob Buwa, located at Gorordo Avenue, Cebu City since they are really clean when it comes to the delicacy. Other than Azul, it’s taste at your own risk.
