KAYU: Kitchen + Bar serves delectable dishes inspired from western cuisine that are then infused with Asian techniques and flavors. Chef Izzy Sy, who founded the restaurant in 2016, brings surprising pairings of flavors that work so well together. In his menu, you can find spaghetti made from squid ink mixed in a bowl with pork chashu, soy bacon cream, egg yolk and puffed rice. You can have chicken wings glazed in guava barbecue sauce as appetizer, and a caramel bar served in a sizzling skillet topped with ice cream for dessert. KAYU, which comes from the Bisaya word for fire, both refer to the fire used in cooking, and the fire that drives you to cook. Chef Izzy Sy is a graduate of the Culinary Institute of America. He interned at the kitchen of Masaharu Morimoto in Napa, California where he found most of his inspirations then brought it back to Cebu. If he was to characterize his menu at KAYU, Chef Izzy would often describe it as “modern California cuisine” with an Asian twist. The food at KAYU is something everyone should check out.

One of the highlights at KAYU: Kitchen + Bar is the hearty salmon glazed with savory teriyaki sauce, paired with sushi rice cake, and bokchoy. According to the restaurant’s Instagram post, a group of 30 people came in and all ordered the dish as their main course. KAYU also prides itself with their Conchinillo Esxquisito, an 8-hour roasted pork that is at once juicy and crispy served with apple puree and chahan rice.
